Peach Salsa
Makes about 2 cups
Ingredients:
4 ripe peaches or nectarines, diced
Juice of 2 limes, about 1/4 cup juice
1 teaspoon honey
1/3 cup diced red bell pepper
¼ cup heaping tablespoon chopped cilantro
2 tablespoons finely chopped shallot
1/8 teaspoon sea salt
Method:
In
a medium size bowl, combine diced peaches and honey stirring gently until the
peaches are coated. Add the other ingredients mixing until well combined. Refrigerate
until serving time adding salt to taste. The flavors are best if the
salsa is refrigerated for 4 hours or overnight. Serve on endive leaves, as a
relish or with grilled or broiled fish or chicken.
